Anyone who grew up in Texas knows that burnt ends are the leftover pieces of the brisket, they are fattier, smokier, crispier, and darker than the rest. Caramelized and delicious beyond description. The pit masters normally hold them as a treat for themselves or a special customer who can appreciate them as he would. This page is my equivalent to a burnt end, this is where I put everything that just doesn't have a home elsewhere on this site, but is just too good to throw away.
